Syrah

Vin Gris

Vin Gris, the French expression—which translates literally as “grey wine”.  The wine is the by product of the table Pinot.  As each lot of Pinot comes into the winery some juice is syphoned off (the French refer to this process as saigner or 'to bleed') in order to create a higher solids to juice ratio and then the juice is put to stainless tank where it is fermented very cool.  When the wine is dry it goes to bottle within a couple of months to capture the bright fruit notes of this cool fermentation.
